This recipe is a great alternative from the Italian classics for using mince and may become a new family favourite!
1 tbsp coconut oil, or your preferred oil
1 brown onion finely chopped
4 garlic cloves, crushed
500g beef mince
1 tsp ground cumin
1 tsp ground coriander
1 tsp curry powder
1 tsp ground turmeric
¼ tsp ground chili
1 x 2.5cm piece ginger peeled & grated
1 cinnamon stick
250 ml coconut milk
½ tsp salt
Heat the oil in a large heavy based frying pan & fry the onion and garlic for 4-5 mins until translucent. Remove from the pan and set aside.
Add the mince and brown, stirring occasionally.
Return the onion to the pan together with all the other ingredients. Simmer for about 20mins.
Serve with rice or cauliflower rice and some chopped coriander if desired.
